Pumpkin and red beans curry

Ingredients

Pumpkin ¼ kg (cut in large pieces)
Turmeric powder ½ tsp
Chilly powder ½ tsp
Dry red beans 100g
Scraped coconut 1 cup (separate ½ cup of scraped coconut)
Garlic 3 cloves
Cumin seeds ¼ tsp
Coconut oil 2 tbsp
Dry red chillies 2 (broken)
Mustard 1 tsp
Curry leaves
Salt to taste


           

Soak the dry beans overnight in water. Cook the soaked beans on flame and when they are half cooked, add the pumpkins adding turmeric powder and cook till the water gets evaporated.

Grind the coconut with cumin seeds, chilly powder and garlic.

On medium flame, add the ground coconut with the cooked beans and pumpkin.
In another pan heat 2 tbsp of coconut oil and splutter the mustards, dry red chillies and curry leaves.
Add the ½ cup grated coconut and fry them in the brown and remove from flame.

Season the pumpkin-beans with the fried coconut.
