Rice and jaggery cake

Ingredients

Rice flour (not very fine) 2 cups
Jaggery ½ kg (melted)
Coconut chips ¼ cup
Shallots ¼ cup (sliced)
Coconut oil

           

Method of Preperation

In a bowl mix the rice flour melted jiggery adding a little water to make the consistency of a dosa batter. Keep it aside for half an hour.

In a shallots vessel of bell metal on flame, pour the coconut oil and fry the onions and coconut chips till brown. Now add the rice flour batter to the vessel and stir.

Close the vessel with a heavy lid and place coal on the lid.

Let it cook for 15 minutes on medium flame.
