Vegetables cooked in curd

Ingredients

Raw plantains (cut in small sized cubes) ½ cup
Yam (cut in small sized cubes) ½ cup
Green chillies 6
Black pepper powder ½ tsp
Turmeric powder ½ tsp
Scraped coconut 1 cup
Cumin seeds ¼ tsp
Curd (well beaten) 3 cup
Mustard seeds 1 tsp
Fenugreek seeds ¼ tsp
Dry red chillies 3 (broken)
Oil 1 tbsp
Curry leaves
Salt to taste


           

Rinse and drain the green plantain pieces in warm turmeric water.

In a heavy bottomed vessel cook the plantain and yam pieces adding black pepper powder, turmeric powder and salt in 2 cups of water.

Grind the scraped coconut, green chillies and cumin seeds to make a paste

When the pieces are cooked, add the coconut paste to it and it simmer. Add curd and stir till the curd gets thickened on medium flame, remove from heat.

Garnish the kurukku kalan with mustard seeds, fenugreek seeds, dry red chillies and curry leaves.
